crisp cucumber salad

We've had a real food shabang this past week.  Remember my New Year's plan that includes (but not limited to) getting slim?  I am getting ready to start a program and in the meantime, I've been having my favorite last meals.

Last Friday, my hubby took me to Jaleo, a favorite dining spot of ours.  A few years back, we set out on a mission to taste our way through life, part of this mantra is how I got to where I am today with my weight.  The other part led us down Iron Chef paths and in search of Michelin Stars throughout America.  And despite eating some amazing, extremely indulgent, beyond our means meals, our moderately-priced meal at Jaleo ranks right up there with the best of them (Le Bernardin anyone?) for us.  We had the chef's tasting menu and 30 small plates later, we had died and gone to heaven.

Dying for some punch-packing flavors at home, we set out to make this Crisp Cucumber Salad initally featured in Simple and Delivious magazine and it did NOT dissapoint.


Crisp Cucumber Salsa
Yield 2-1/2 cups

2 cups finely chopped seeded peeled cucumber
1/2 cup finely chopped seeded tomato
1/4 cup chopped red onion
2 Tbsp minced fresh parsley
1 jalepeno pepper, seeded and chopped
4-1/2 tsp minced fresh cilantro
1 garlic clove, minced or pressed
1/4 c reduced-fat sour cream
1-1/2 tsp lemon juice
1-1/2 tsp lime juice
1/4 tsp ground cumin
1/4 tsp seasoned salt
Tortilla chips

I lost my jalapeno somewhere between the grocery store and my home (I know…) so I decided to heavy-up on the spices in lieu of a fresh jalapeno. I added a 1/4 tsp of ground ginger, smoked paprika, cumin, coriander and a pinch of cayenne pepper.  You should try it if you want a fresh yummy lo-cal snack!
