Diet Update


I thought it was time to give a quick update on my diet. I say this with my tail between my legs.  It's not an easy thing to talk about - a total admission that you have a problem.  My hope is by putting this out there it will help me be accountable through the remainder of my journey.  It will be a long one, for sure.

I'm not calling it a life change....yet.  I did this kicking and screaming.  And it takes months to make something a habit. So currently, it's still a diet. I am hoping my life will change and I will view food differently.

Here was me at 23 lbs down.

I have lost 32 lbs so far.  My hubby has lost 42. We feel so much better, already!  My plantar fascitis stopped throbbing.  My hips don't hurt.  My pants don't fit - in a good way! The first month we did a liquid-only diet (regulated and monitored by a doctor) and now we're back to real food and couldn't be happier.

I know this is going to sound silly, but Gwyneth's new book 'It's All Good' has been pretty revolutionary in our house.

She was put on an elimination diet by her doctor, and the things she eats now are very similar to the things we are eating on our meal plan. Whether you follow Paleo, or gluten-free living, these principles seem to ring true to us carb-o-holics. So what if she's not a doctor, she looks great and I need healthy recipes for our meal plan - so I'm a believer.


When I decided to throw away all of our regular flour and pasta and the stores of reserves in our pantry, and opted to buy coconut flour, almond meal, millet and brown rice flour - my pocket book was hurting from that shopping trip.  But we just feel so much better!  And look at Gwyneth.  If she can do book-signings and photo shoots sans hair & makeup, I am gonna give this a whirl.


Some of the recipes from her new book that we are loving are the "Candy Bars" and the Grilled Salmon with Grilled Lemon Vinaigrette.

More soon.  As I said, this will be a long journey.  And thank you to so many of you who have reached out via email.  I am so happy to have a big ole group of supporters in my corner. :)

    Good for you! I know what a PIA dieting can be, so good job sticking with it. I am going to go check out Gwenyth's book at Barnes and Nobel this weekend! Have a great week.

  7. More power to you Bethany. It is a hard row. I have been up and down with it my whole life and you are on the right track! Eating right for my blood type has worked for me and it is in line with your plan . I have kept the worst 30 lbs off since Nov (again). I must get up for 20 more. You are an inspiration!

  12. Awesome Bethany! Kudos to you and your hubby!!!! No matter what type of diet you do or mantra you follow, if it works and is not making you feel worse than before, I say GO FOR IT!
    As a physician, I deal with this all the time too (sadly, with Kids), I always try to tell them that this is for their 'GOOD HEALTH leading to a GOOD LIFE"! Physical appearance is also only a secondary good "side effect" to living healthy and luckily for you, you still look beautiful! I'm here dear, one of your cheerleaders!!!!

  13. Bethany I am so proud of you. After one of my surgeries this past year I worked with a dietitian & It was one of the best things I could do. Eating Real Food is yes, often more expensive, however we are coming into the strawberries blueberries season. There are so much one can eat as much of as desired! I gained 25 lbs, which is a lot for me! We will cheer each other on!

    Congratulations Bethany!! I gave up white everything, processed food and sugar at the beginning of this year and have never felt better. It's amazing how much energy those foods zap from you. I think you're brave to put it all out there but totally right, that it will help keep you on track knowing that you've said it out loud:)) Best of luck with it all xo Carol

  19. I am so proud of you! It is such hard work to lose weight. I need to lose 20 lbs ugh! you are motivating me. I started in January and lost 10 lbs and have gained it all back. miserable. think i need this book

  24. Girl, you look fabulous. The best result though is in how you feel. I haven't been feeling so hot lately. But I'm inspired. You gave me the kick in the pants I needed this morning to do the old clean out the pantry thing I've had on my list for so long.
