Hankering for a little cake?





I love me some coconut cake, but it's just my hubby and I and I only bake a whole cake on special occasions.  I found JUST the thing: cake in a cup! I just made it and it's pretty good! 


Here's the ingredients that you mix in a large coffee cup.

4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa 
( plus 1/4 cup of chocolate chips for more chocolatey taste)
1egg
3 tablespoons milk
3 tablespoons oil
1 tsp. vanilla

Microwave for 3 minutes and let cool before eating! Wow, too easy to have your cake and eat it too!

  3. We have done this, and it's great! Coconut is my absolute favorite. So, when I saw the first image I was hoping that you were making that! Do you have a good coconut cake recipe, too?

    1. really, coconut is your favorite, too? Could we have any more things in common? I will experiment with a coconut version and let you know. Just what I need: instant cake when I want it. oh no!

  4. Hooray! I gave my mom this recipe and promptly lost my own copy. She is always traveling (Siberia this time) so when I want it I can't call her for it. I am printing it now.

    Michael Symon's Cake in a Cup recipe is for 4 people, so check that one out!
    But it does have 4 eggs in it, and a boatload of the same quantities in making a WHOLE cake! But sometimes we don't need a whole one, so I guess it's still great...
